Balsamic glazed roasted carrots are one of my favorite vegetable side dishes to make, and I’m pretty sure they’ll become one of yours, too! These carrots are beautifully caramelized and drizzled with a rich balsamic glaze that brings out their natural sweetness. Not only are they delicious, but you’re getting nutritional value from the carrots.! Plus, they’re super easy to prepare—just toss, roast, and enjoy!

  • Carrots
  • Garlic
  • Balsamic vinegar
  • Brown sugar
  • Olive oil
  • Dried Rosemary
  • Dried thyme
  • Pepper
  • Salt

How to Make Easy Balsamic Glazed Roasted Carrots

Preheat the oven to 425°F. Wash and cut the carrots into 1-2 inch pieces on the diagonal. Spread the carrots out on sheet pan.

In a small bowl, combine garlic, balsamic vinegar, brown sugar, olive oil, rosemary, thyme, salt, and pepper and whisk.

Pour most of the glaze mixture over the carrots and coat evenly, saving a small amount to drizzle later. Roast in the oven for 20-25 minutes. Check and see if the carrots are cooked fully, and add more time if needed.

Once done, drizzle the remaining glaze and serve.

Tools You’ll Need

  • Sheet Pan – Roasting in the oven requires a sheet pan – make sure you have one on hand.
  • Vegetable Peeler – A must-have tool in the kitchen and this recipe.
  • Measuring Spoons – The measurements listed are what I’ve found to be the perfect combination for this glaze. Measuring spoons will make your recipes come out perfect every time!

Variations

  • Brown sugar can be swapped for honey.
  • Sprinkling with feta cheese adds a deliciously tangy kick.
  • Feel free to cut the carrots into any shape you prefer, or even leave them whole. Just note that the cooking time may very a little depending on how large the pieces are.
