How to Make Chicken and Broccoli Cheesy Rice Casserole
- Start by preheating the oven to 350°F and prepping the casserole ingredients.
- Cook the rice in chicken broth for extra flavor. You can also use water here.
- Chop up the chicken and broccoli. Season the chicken cubes with salt, pepper, and garlic powder, and cook just the chicken in a large soup pot with some olive oil until cooked through.
- Once the chicken is cooked, turn off the heat. Add the cream of chicken, cream of mushroom, cooked rice, broccoli, sour cream, milk, bread crumbs, and pepper to the chicken and give it a mix. Stir in half the cheese and pour into a greased 9×13 casserole dish. Top with the rest of the cheese.
- Bake for 25 minutes then broil for 3-5 minutes until the cheese is bubbly and golden.
Substitutions and Customizations
I like using classic cheddar cheese in this casserole but feel free to switch it up with your favorite cheese. Some options could be swiss, mozzarella, colby jack, pepper jack, or gruyère.
Add extra veg if you’d like! Carrots or peas would be great in this!
You can use frozen broccoli in place of fresh broccoli heads.
You can cook the rice in water instead of chicken broth if you prefer.

1-1/2 pounds boneless, skinless chicken breasts
2 heads of broccoli
1-1/2 cups of white rice
1 8 oz bag of shredded cheddar cheese
1 tablespoon olive oil
3 cups chicken broth
1 10.5 oz can condensed cream of chicken soup
1 10.5 oz can condensed cream of mushroom soup
1 cup milk
1/2 cup sour cream
2 tablespoons breadcrumbs
1 teaspoon salt
2 teaspoons pepper
1 teaspoon garlic powder
Directions
- Preheat the oven to 350°F. Grease a 9×13 casserole dish or cake pan.
- Bring chicken broth to a boil over high heat in a medium saucepan. Add rice and stir. Cover with a lid and turn the heat to low. Let simmer for 15-20 minutes until the rice is fully cooked.
- Slice chicken into 1-inch pieces, season with salt, 1 teaspoon of pepper, and garlic powder. Cut the broccoli heads into small florets.
- In a large soup pot, warm the olive oil over medium heat. Add the chicken and cook through. If the chicken releases juices, spoon it out leaving just a tablespoon in the pot. Turn off the heat.
- Add cooked rice, broccoli, cream of mushroom soup, cream of chicken soup, milk, sour cream, breadcrumbs, and pepper to the chicken in the large pot and stir. Stir in half the cheese. Pour into a casserole dish or cake pan. Top with the rest of the cheese and bake for 20-25 minutes.
- Turn the oven to a low broil and broil for 3-5 minutes until the cheese is bubbly and golden.
