This recipe is split into two parts: the chicken and the actual gyro assembly. The chicken marinade is easy to make, but the marinade itself is what takes the longest. So it’s best to plan ahead and marinate the chicken the night before, so all you have to do when you’re ready for dinner is bake the chicken and assemble the gyros.
For the Chicken, You’ll Need:
- Chicken: Depending on how many people you’re feeding, you can use more or less, but for this recipe, I use about a pound and a half.
- Olive oil and Balsamic Vinegar: I love using oil and vinegar as a base for many salad dressings and chicken marinades.
- Lemon Juice and Garlic: Using fresh lemons and garlic add a brightness to the chicken that complements this dish perfectly.
- Spices: Feel free to adjust the spices to your liking, but my fav combination for this dish is paprika, onion powder, salt and pepper and red pepper flakes.
For the Gyros, You’ll Need:
- Pita Bread: Pita bread makes the gyros, but on occasion, I will opt for a Mediterranean bowl and swap out the pita for rice.
- Romaine lettuce
- Kalamata Olives: The best kind of olive to use because of their rich, fruity flavor.
- Orange Bell Pepper: Use any color of bell pepper, I just think orange is the prettiest.
- Feta: A salty, tangy flavor and crumbly creamy texture.
- Hummus: Brings a creamy, nutty flavor. I love to use garlic or jalapeño flavored hummus.

How to Make Chicken Gyros
- Cut the chicken into 1-inch pieces. Make the marinade and marinate the chicken ahead of time.
- Once the chicken is marinaded, preheat the oven to 425°F. Since the chicken is cut into small pieces, it will only take about 15 minutes to cook.
- Prep your toppings (chop the romaine and bell pepper). Get all the wrap ingredients out.
- Heat up some oil in a pan over medium-high heat and toast the pita breads for a couple minutes on each side.
- Spread some hummus on the pita bread, add romaine, bell pepper, kalamata olives, and chicken. Then top with tzatziki, feta, and pickled onions. Sprinkle with parsley and serve!

Ingredients
- For the Chicken
1-1/2 lbs. chicken breasts
1-1/2 tablespoons olive oil
2 tablespoons balsamic vinegar
Juice of 1 lemon
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon red pepper flakes
2 garlic cloves
- For the Wraps
6 small pita breads
Romaine lettuce
Kalamata olives
1 orange bell pepper
Hummus
Feta
Directions
- Cut the chicken breasts into 1-inch pieces and put them in a zip-loc bag or Tupperware container.
- Add all of the chicken marinade ingredients in a food processor or magic bullet. Blend until smooth. Pour marinade over cut-up chicken and let marinate for at least two hours or overnight.
- Once the chicken is marinaded, preheat the oven to 425°F.
Add the chicken to a sheet pan and cook for 15 minutes. It may take longer, depending on the thickness of your chicken pieces. Use a meat thermometer to make sure your chicken is cooked to at least 165°F. - Place a pan over medium-high heat, add 1/4 tsp of olive oil, and let heat up. Place one pita bread in the pan and let cook for around 3 minutes on each side to get toasted. Repeat for each pita and add more oil if needed.
- To assemble the wraps, add hummus, lettuce, chopped bell pepper, olives, and chicken to the pita bread. Top with feta, tzatziki sauce, and pickled red onion. Sprinkle with fresh parsley and serve.
