Quick and Easy Pickled Red Onions Recipe
- Red Onions – I use a medium red onion but if you use a large onion, you may need to use two jars as they won’t all fit.
- Sugar and Salt – sweet and salty, perfect for pickling.
- Apple Cider Vinegar – Use apple cider vinegar, I promise. I’ve used other vinegars before and they never taste as good as using ACV.
- Garlic – I love adding a hint of garlic to this recipe so go ahead and peal a couple cloves and pop them in the jar with the onions.
Tools You’ll Need
- A Mandoline Slicer – A mandoline slicer is the best way to slice onions. It’s safer, faster, and your eyes won’t water from cutting onions as much!
- A Small Saucepan – We’re only boiling one cup of water, so a 1.5-quart saucepan is all you’ll need.
- Mason Jars – Mason jars are very important to this recipe. You’ll need the air-tight lid to keep the pickled onions fresh.

Ingredients
1 red onion
1/2 cup apple cider vinegar
1 cup water
1-1/2 tablespoons granulated sugar
1 teaspoon salt
2 cloves of garlic (optional)
Directions
- Slice the red onion thinly. A mandolin makes this step even easier and ensures even slices. Place red onion in a mason jar along with 2 cloves of garlic.
- In a small saucepan, bring water to a boil. While the water is boiling, combine apple cider vinegar, sugar, and salt in a small bowl.
- Once the water is boiling, turn off the heat and add the apple cider mixture. Stir until sugar and salt are dissolved. Pour hot apple cider vinegar mixture over the red onions in the mason jar.
- Let rest on the counter for one hour, then put the cap on the mason jar and refrigerate. Store in the refrigerator for up to two weeks.
