  • Peaches – what’s a cobbler without peaches!
  • Blueberries – for the perfect sweetness
  • Lemon– juice and zest
  • Sugar – white or brown
  • Cornstarch – to thicken the filling
  • Refrigerated Biscuit Dough – using premade biscuits is a time saver, plus it is just as delicious

How to Make Peach and Blueberry Cobbler

Preheat the oven to 375°F. Then, begin by thinly slicing the peaches. Place the peaches into a large bowl, then add the blueberries, lemon zest, lemon juice, sugar, and cornstarch. Mix well.

Pour the fruit mixture into a greased 8X8 square baking dish. Pop open the flaky biscuits, separate them into thinner layers, and place them over the fruit mixture.

Place the cobbler in the oven and bake for 20 minutes. Mix two tablespoons of sugar and 1 tablespoon of water in a small bowl. Brush the sugar water over the cobbler, then return to the oven to bake for 30 more minutes.

Serve warm with vanilla ice cream and enjoy!

Storage: Store covered in the refrigerator for up to 3 days.

Mix it up! Don’t be afraid to use your favorite summer berries! Raspberries and blackberries would be delicous in this.

Brown Sugar: Amp up the sweetness by replacing the granulated sugar with brown sugar.

I like to slice my peaches and leave them larger, but feel free to cut them into smaller, bite-sized pieces.

Feel free to make your own homemade biscuits for the topping, but in my opinion, store-bought Pillsbury biscuits get the job done so quickly and deliciously!
