Step 1: Season the cod fillets with salt, pepper, garlic powder, and onion powder.
Step 2: In a large pan over medium-high heat, add 1 tbsp olive oil and1 tbsp butter. Once hot, add the seasoned cod fillets and cook on each side 3-4 minutes until cooked through and the internal temperature is at least 145°F. Remove the fish to a separate plate.

Step 3: To the same pan, add 2 tablespoon butter. Once melted, add the minced garlic and flour, and sauté for about 1 minute, until fragrant.
Step 4: Then, pour in the white wine and lemon juice and let it simmer for 3-4 minutes.

Step 5: Add the heavy cream and fresh thyme sprig and stir. Let the sauce start to bubble, and season to taste with salt and pepper.

Step 6: Return the cooked cod to the pan with the sauce and simmer for 3-5 minutes. Garnish with more fresh thyme and parsley and serve warm.
