How to Make Roasted Rainbow Fingerling Potatoes
Step 1: Preheat the oven to 400°F. Start preparing the potatoes and onions by first washing then slicing the fingerling potatoes in half length wise. For the larger potatoes, slice them 2-4 times length wise to form oval-shaped disks. Roughly chop the red onion into slices.
Step 2: In a large mixing bowl, add the sliced potatoes and red onion. Pour in the olive oil and add the minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix well until everything is evenly coated.
Step 3: Spread the potatoes and onions out on a sheet pan lined with parchment paper. Bake at 400°F for 30-40 minutes. OPTIONAL: In the last 10-15 minutes of cooking, sprinkle goat cheese and basil over the potatoes and onions and pop back in the oven. Serve warm and enjoy!
